Three leaf salad

Ingredients (serves 4):
1 radicchio, roughly chopped
2 endives, roughly chopped
2 handfulls of arugula
2 cups (500 ml) of regular balsamic vinegar
Drizzle of extra virgin olive oil from Italy (see Useful tips: Olive oil from Italy)
Parmigiano reggiano shavings (see Useful tips: Parmigiano reggiano)
Salt and pepper
In a saucepan, boil 2 cups (500 ml) of regular balsamic vinegar for approximately 30 minutes. Let cool.
In a large bowl, mix the radicchio, endive and arugula leaves. Add a drizzle of reduced balsamic vinegar and extra virgin olive oil from Italy. Add salt and pepper and garnish with parmigiano reggiano shavings.
