Turbot with tomato sauce
and black olives

Ingredients (serves 4):
4 turbot fillets
2 tbsp. (30 ml) of olive oil (see Useful tips: Cooking oil)
2 garlic cloves, crushed with a garlic press (see Useful tips: Garlic)
1 x 400 g Cirio can of Italian cherry tomatos (or other Italian brand)
¼ cup (62 g) of pitted kalamata black olives (see Useful tips: Fresh olives)
1 tbsp. ((15 g) of fresh oregano, chopped
Drizzle of olive oil from Italy (see Useful tips: Olive oil from Italy)
Salt and pepper
Preheat the oven at 425ºF (218ºC).
In an ovenproof skillet, heat the garlic, the cherry tomatoes with the juice and the olives in olive oil. Salt and pepper the turbot fillets and place them on the sauce. Bake in the oven for 12 minutes. Serve with a salad (Three leaf salad), then garnish with fresh oregano and add a drizzle of olive oil from Italy.
