Fried artichoke

1 small artichoke, purple if possible (more tender)
1 l of olive oil (see Useful tips: Cooking oil)
1 lemon cut in two

Remove the outer leaves of the artichoke until tender leaves, which have a white base, are exposed.
Cut off the head of the artichoke (green part) to only keep the tender base of the leaves. Rub with lemon to slow oxidation.
Cut off most of the stem, remove the residue of the cut off leaves and clean the remaining stem. Soak artichoke in cool water and remaining lemon juice for 15 minutes.
Pour olive oil in a wok and heat to 425ºF (218ºC). Place the artichoke, stem first, into the hot oil. After 10 minutes, place the artichoke on a paper towel, gently open the leaves and add salt. Fry a second time for 3-4 minutes, but place the artichoke head first.
Remove from oil, sprinkle with salt and serve.
